    I love it! I have mass produced it and our service organization feeds approximately 600 people at the Mariucci Fiesta which benefits Confidence Learning Center in Minnesota.

    This is a delicious recipe!!! It is SO EASY!!!! I'm only 15 and was able to make it for my dad"s birthday. Of course I had a little help but only in crushing tomatoes and shredding cheese. I must say the eggplant tastes AMAZING!! I love the whole dish, but BEWARE, I forgot to add the 1/2 cup of pasta water and the pasta (the ones that were not covered in cheese turned hard. Lucky for me I had a lot of cheese and had covered almost every nook on top, so only those that were not covered turned hard. This is an easy dish for those who need to cook and have a good amount of time. I TOTALLY recommend this dish! (P.S. I used King's Choice Gouda Cheese, and it was amazing (P.P.S. nothing I just wanted to type some more...

    I have this in the oven right now and it smells amazing! I have made this many times and it is one of my family's favorite meals. My kids don't usually like eggplant so I replace that with mushrooms. I also use whole wheat pasta, and sweet Italian turkey sausage for a healthier version. It never disappoints.

    This was delicious and definitely a keeper in the recipe file. A change we made was to oven roast the eggplant rather than fry it. I originally posted this review with a four star rating. But today updated it to be five stars. Given we have made this at least a dozen times and it has been reliably fan-tab-ulous every single time. Ultimate comfort food that is also "company's coming" worthy.

    I make this ALL the time. It is DE-LISH !! I bake my eggplant instead of fry it in hopes of cutting some of the fat from the recipe. It comes out so good.

    I LOVE eggplant and had an extra one lying around that I needed to use within the next few days. I found this recipe and it's pretty awesome. A bit labor-intensive for my taste (yes, sigh, I am a lazy cook, but well worth the effort. The only thing I think was lacking was preparation of the eggplant. My husband salts the eggplant and lets it sit for about 5 mins. This takes out a lot of the unnecessary liquid and bitterness from the eggplant. Rinse and squeeze dry with a napkin, then continue on with your recipe. One more thing, all of our ingredients didn't fit in the baking dish. Next time we will either use a deep 9x13 or a larger pan. Besides those two small things, the recipe was amazing. It made my kitchen smell like Italian goodness.

    This recipe is simply AWSOME! I'm not a big fan of eggplant, nor do I have much experience cooking it, but it was fantastic in this recipe. I followed the recipe to a T. The only thing I did differently was to mix everything in a bowl, then transfer it to my baking pan. There are alot of steps to preparing this, but it is well worth it! I also added a little oregano to my sauce and it turned out great

    I've made this dish several times and it's always great! I'm sure that it will be a hit with the superbowl crowd of meateaters this Sunday! You will use more oil then you are use to due to the eggplant being such a spong when it cooks. Make extra because this is a great dish the next day.
