Here is why I love this recipe: I have a SUPER picky 2 year old and she LOVES these, and she DOES NOT eat banana flavored anything! I made the recipe as is with just the addition of some cinnamon (I almost always add it to baked goods, and she happened to grab one off the counter and ate it, and then wanted another one. Since she like them so much I decided to make them "healthier" and have done several healthier versions, the first time was just half white/half whole wheat flour, the second was all whole wheat, the third was all whole wheat and half stevia baking mix/half brown sugar, the fourth was all whole wheat and all stevia baking mix, the fifth was all whole wheat and the addition of shredded zucchini. No matter how I've made these they have turned out awesome and my daughter begs for them.

Excellent Best I have ever had!!!!! My family raved about them. Even better the next day after sitting in a zip lock bag I used walnuts instead just cause thats what I had in the house. They were great would definately do them again :

Very moist for sure but so BLAND. I don't see this to be a 5 star if you just follow the recipe and not modify anything. I will try this again but probably add another 1/2 cup of sugar and another banana (whipped.

Very tasty ~ great use of ripe bananas. Will definitely make again. I filled the muffin tins to the top for a nice domed muffin top.

There are a few things you should know before you start, and the first is that the muffins are delicious in every way. The second thing to know is that this is not a muffin recipe; it makes enough batter for 12 cupcakes, or 18 if you skimp on the size. I like a full crown at the top of my muffins. I have true muffin tins, and they are pretty much the standard for their size. The muffins are not overly large, and I won't get the crown tops that I want on all of them, and I only got 11 from this recipe.
Overly ripe bananas are all black, not mostly black. When the banana is pealed, the banana will have a yellow translucent surface. This will give you a full flavored banana muffin that will make anyone take notice. Also note that if you are truly using muffin tins, and filling them the way I do, you will need to cook for at least 20 minutes, but often times, it is 21 to 22 minutes.

These are AMAZING. So moist and flavorful. My only comments would be that, firstly, the prep time took way longer than 7 min - granted, I am a novice in the kitchen, but I would estimate 30 min for the average baker, and secondly, I yielded 18 muffins - and I even went above the recommended portion size. However, these are only minor complaints, considering how delicious they were. As a modification, I substituted walnuts for pecans, and they were very yummy. I will definitely bake these again, and recommend the recipe to my friends.

These muffins are not bland at all. They are very delicious as is or with chocolate chips. I love Tyler's recipes.
