    This recipie produces very good flavors and is very satisfying! Be prepared it is very rich. I saw the recipie on the show and then made it from the reicipie on the web site. If I had not watched the show I would not have known how the paste was made, (in the recipie it calls out the ingrediants but not the amounts of salt and pepper, on the show it was a full handfull of salt. I used 1/2 the musrooms and twice the shallots and garlic as well as 1/2 cup of brandy instead of cognac.
    I will definitely make this agan but with the following revisions: 1 sear the ribs and apply paste without excessive salt!! cook at 250 degrees instead of 300 degreees, until tender, 2 use 1.5 pounds of musrooms, 1 cup of sliced shallots, and 6 cloves garlic, 3 ADD 1/4 cup of sliced onion, 4 1full cup of Brandy or cognac, 5 2 table spoons of mustard., 6 Add rosemary to the musrooms as well.
