This crepe recipe is excellent. If tried other crepe recipes in the past that came out quite oily in the end but this one doesn't. Plus you don't have empty out half a carton of eggs to make them!

The presentation is beautiful and the recipe is easy to follow. I really wanted to like these, but the filling was a little blah for me. Probably won't make these again, but if I did I would put a little less filling in the crepe.

Taste was exactly what I was looking for and was a hit with all. A little more work than I wanted but was nice to know I could freeze them.

The recipe is so wonderfully simple, but since I had extra sauce at the end, I'd recommend skipping the butter - it ought to last in the fridge longer that way. When we made it without butter, it lasted in the fridge (just as delicious as when it was first made! for three weeks! (it was excellent for fulfilling random urges for dessert - think plain vanilla ice cream with the blueberry sauce! and it was still so, SO delicious. It's fun to spice it up a little also and add some ginger. Another 'pointer' I'd have is that the recipe can be made even more appealing by using mixed frozen berries.

I have tried many receipes for blintzes. Tyler's tip on letting the batter rest for an hour so it isn't rubbery really made a difference. The blueberry sauce is really great--not oversweet like pie filling. I make the filling the night before. My husband noticed it was a different receipe without my telling him!

I only made the sauce to go on our waffles. Wow, my new favorite breakfast syrup!

I made this for my boyfriend yesterday and we both thought it was delicious! The blueberry sauce complements the crepe and cheese mixture perfectly. These were so fun to make although they definitely take some time. Perfect for a weekend breakfast or brunch.
