This salad is absolutely fantastic. I make it at least once every week or two in the summer. The walnuts are essential to this dish.

and easy. I tried it without the chicken and it's delicious!

I saw this program a few weeks ago, and decided to give it a try. I'm not a big fan of brown rice, or apples in salads, but WOW, this one was spectacular, crunchy, flavourful, and healthy. Highly recommended.

This recipe is easy to put together and travels well. I took it on a long weekend trip. Everyone loved it!I used a brown rice with whole grains, leftover grilled chicken, and two different types of apples.

I omitted the chicken and parsley and used green pepper instead of red. It was wonderful.

Terrific recipe. Instead of using an apple, I substituted the apple for 3/4 cup dried cranberries/blueberries. I also substituted walnuts for toasted pecans. Recipe was so good!

This recipe is great. It is wonderful with or without the chicken. I first saw this about 3 years ago, but did not make until recently & since then I have made this 5 times!
