Combine the sugar and water in a large heavy saucepan over medium heat. Cook, swirling the pot around, until the mixture is a deep caramel color and looks like syrup, about 8 minutes. Carefully pour in the cream (it will bubble up) and continue to cook for another minute. Cool to room temperature.

I burned mine! I walked away from it for two seconds! My fiancee still loved it though. Gonna try it again and this time I'll remain vigilant.

I wasted 2 batches I had the same problem with it setting up too soon with low to med. heat it did not matter it never turned carmel color I wonder if it makes a diff. useing nonstick pan or electric or gas heat I love Tyler but sorry about this one.
