My kid loved it, and I thought it tasted good as well. However, I have the same problem with the carrots. I cooked and cooked them. I would try cutting them up tiny and mixing them up with the mango to try and get them cooked enough

Delicious! My one year old loves this recipe. I even tried a bit on the spoon and it was tasty. Great combination of food. My son is eating solid foods so even though this didn't really puree for me, the smaller chunks were perfect after putting it through the food processor. If you want to puree this, i would add a bit of water or even apple juice. If you add the liquid, use a blender that you would use for smoothies. It will get it nice and soft. :-

I have tried to make this 2 times and still have not figured it out yet. My problem is the carrots. They are not tender enough to turn into a puree after 25 minutes in the oven. The first time I made this, I left them whole for about 35 minutes and then cut smaller to roast for another 20-30 minutes and they just weren't working. The second time, I cut them small and roasted for almost an hour and they still didn't puree. Also, I might need a new blender, but I had to use the food processor to blend this to a consistency my baby could eat. And it still has quite a bit of texture with the carrots. However, I did give it 3 stars because the flavor is there! It does have an amazing flavor, which is why I will continue to make this work. Maybe even roasting the fruit, but steaming the carrots to mush next time?
I'd love to hear anyone who has success on this.
