Tyler has done it again! I made his etouffee for a small dinner party last night
and served it with a muffaletta salad. I made no changes to his recipe. My
guests loved it!

Our family also has an emerging tradition of watching Tyler's show and then having his menu for Saturday night dinner together. It works because his recipes always work. I went through a Cajun phase about 20 years ago and loved the adventure of it all, but at some point I just sort of moved on. As my kids and I started to cook the recipe I remebered how much fun this cuisine is. My chicken rendered out a little more fat, so I added about a cup of flour and cooked it until it was redish in color. I skimmed some fat off of the sauce at the end as well. After adjusting the seasoning, I wanted a little more heat, so I added in some bottled hot sauce. The beignets were a perfect finish for our family dinner and a movie at home. Thanks Tyler!

Most every Saturday my husband and I watch Tyler's Ultimate. If my husband, Joe, thinks the recipe sounds interesting I make it for Saturday supper. Today we saw this Etouffee recipe. The recipe took both Joe and I back to New Orleans. The taste is so authentic. Great recipe. Thank you, Tyler, for another winning meal.

He did not say add peanut butter, he said it should look like peanut butter.
Overall, a great recipe, and a good one for tweaking!

I haven't made the dish so I can't rate it. However, in the show, Tyler added peanut butter to the roux......I didn't catch the amount. Did anyone see the show and remember?
