I thought this was an average enchilada recipe, definately nothing fantastic. I was disappointed because I was expecting something awesome. I will not be making again.

These are the best chicken enchiladas I have ever had! The chipotles definitely make the dish. They are very spicy (which I like, so if you don't like a lot of heat, I would suggest cutting back to 1 or 2 and discarding the seeds when you chop them. I enjoy this dish so much that I make up batches of the "filling" and freeze it. When I get a craving for an enchilada, I simply thaw the filling in the microwave, fill a corn tortilla and top with the enchilada sauce and cheese. Pop it in the toaster oven or microwave and there you go! I top with sour cream and guacamole (or just avocado Wow!

I made these for my mom on Mother's Day this year, and she adored them--along with everyone else in the house!!! Needless to say, there were no leftovers (and I doubled the recipe! Thanks Tyler, these are awesome!

I made this recipe and was VERY impressed. I'm a cooking novice but found the instructions very clear and easy to follow. My picky husband LOVED these so much that he ate all the leftovers for lunch and dinner the next day! I couldn't find the chipotles at the store so I skipped them, and I used flour tortillas instead of corn (they seem to hold up better. The final step of dipping the tortillas in the sauce before rolling up and baking was a little messy, but well worth it. These enchiladas turned out great and I will definitely make this recipe again and again.

My sister made this last night for a get together... It was fantastic. I know she wouldn't review it herself since she is a very busy lady,so I thought I'd let every one know how great this is. It takes a little time to make but well worth it. The only thing she said she would change is to use diced tomatoes instead of stewed, less chunks. (I personally didn't mind the bigger pieces of tomato. Not too spicy the kids liked it. Even my picky husband liked it.
