I made this recipe last night and was very pleased with the outcome! All the flavors really combined to make the enchildas very tasty. I had read the previous reviews about it being too spicy so I cut the amount of chiles I used. I actually thought it wasn't spicy enough. So, next time I will use the full amounts. Also, I diced up the stewed tomatoes so it wasn't so chunky. Overall...very good dish and makes a lot!

This recipe taste better than any enchilada meal you have or will ever eat at any resturant!.I did however add two cans (14.5 oz each of tomatoes...YUMMY!.Tyler ROCKS!

I really like this recipe's use of corn. Adds a lot to the dish. My husband is a huge fan of these and they are really easy to make!

HUGE RECIPE! This would be great for a party. I toned down the spices just a bit the 2nd time around for the kids. A definite winner!

My husband and I loved it. It would be great for a party because it could be preped ahead of time & it could be made in big batches. Just add margarita.
