This was delicious! I made a homemade enchilada sauce and mixed it half and half with the store bought just in case my homemade wasnt great, but it turned out amazing!! I also had to come up with my own "Mexican Spice Blend" and ended up just using a homemade taco seasoning I had put together a few days ago. Yum! This was alot of work, so def a Sunday night meal!

I'm not a fan of spicy stuff, so I left out all the chilis etc and it was super tasty! A side of corn bread and red beans and rice goes great with this... I'll be making this again!!

No other enchilada recipe has impressed me more than this one! Anytime a group of my guy friends want a spicy meal, they ask for this dish!

What I very tasteful recipe! My family enjoyed this or dinner and we are including this in our monthly menu cycle. I always visit Food Network for any family and party food recipes. I love Food Network!

Wow were these good. I give five stars even though I added at least one other cup of cheese - matter of fact I probably tripled the cheese. Instead of making two pans, I made one layered pan with sauce on the bottom, then 6 shells, then cheese, then chicken stuffing, repeat. Oh yes and I added black olives. But the basic recipe shines.
