This was a good recipe, except for those 4 whole chipotles. Yikes, these peppers have a very strong flavor (and heat that really overpower everything else. It was so hot that only I would eat these enchis, and the flavor was still much too overpowering. Definitely cut them in half, or even better, add only 1. Make sure that the tomatoes aren't too chunky, and if you're not a big corn fan add a little less corn. This recipe could be good with some tweaking.

I have made quite a few of Tyler's recipes before and they are usually quite good. This one wasn't my favorite. I had problems with my tortillas splitting on the top and there didn't seem to be enough enchilada sauce. I actually had to go to the store to get more! Perhaps was something I did wrong. The flavor was great though, and my husband really enjoyed them.

Not having cooked these before I had no clue how they would turn out. However, just like all of his other recipes, I know I can trust Tyler to deliever. Another outstanding meal loved by me and my friends.

This receipe is my new favorite Mexican dish. The chicken enchiladas were full of flavor and color. I'm anxious to make these again for family and friends. My husband loved them.

I sit here typing this review with my laptop rested upon my full belly. I made these enchiladas for dinner tonight. My cooking audience was my husband and 4 children. They are a very difficult bunch to please. I served with yellow rice and some black beans. Garnished with fat free sour cream and fresh tomatoes and scallions. They were simply amazing. I have never tasted anything so good - EVER! Gone are the trips to the Mexican restaurant. These were (we all agree far better than anything we could buy. I left out the chipotle peppers because other reviewers found them too hot. Tyler Florence rocks (as my 6 year old put it Thanks for the new favorite food in our house.

my husband and daughter loved this receipe. After reading the remarks, I left the peppers in adobe out because I was concerned it would be to spicy for my husband. (My 12 year old loves adobe peppers and when she found out I left them out I promised next time I would make half with and half without Without the peppers in adobe, it was just right for my husband and still spicy enough for my daughter. In fact, I would say if I would have added it all it would have been to spicy for us. (and again my daughter and I love spicy, while my husband is more mild
I also added rinsed and drained black beans when I added the tomatoes. Dipping the tortillas in the sauce maked a mess, but it made them softer and easier to work with. This one will be a regular in the kitchen.

As usual Tler's recipes are wonderful. A great recipe for leftover chicken.
