    This has become one of my favorite recipes. One trick I've found is to buy canned diced tomatoes with chipotle peppers already in them. Works out great. Then I don't end up with a few random chipotles. Great recipe!

    I made this tonight because I had chipotle peppers I needed to use up. It was really yummy! I didn't have corn so I left that out. I also had some leftover refried beans so I threw that into the mixture and it was good!They are a little spicy but we like spicy.

    My family loved this. Is wasn't too spicy and had the right amount of kick and flavor. I added black beans to the mix and may put cheese in the center next time. Mmmmm.

    Loved the flavor of the dish bus was disapointed that the tortillas did not hold its shape and came out soggy. When I tried serving it on a dish it completely fell apart. Does anyone have suggestions?

    I thought that these were really good, and they were pretty easy to make as well. They are a little spicy with the chipotle peppers though (I didn't think that they were too hot, however my friend thought they were a bit on the hot side). If you prefer a milder taste I would suggest cutting out the chipotles or using 2 instead of four. But do give it a try because they were super good :o)

    We absolutely loved this recipe and I recommend it to others! I tweeked it a bit-- I marinated the chicken (lemon juice, garlic, onion powder, garlic powder, cumin, hot sauce, salt, pepper) for a couple of hours. Also, I put cheese inside each tortilla as well as outside. It turned out wonderful!!

    This recipe is amazing! The only thing I didnt like is how HOT it is. The chipotle chiles are nothing but fire (But I dont like incredible spicy foods.) I couldnt find mexican spice blend so I used mrs. dash extra spicy instead. I will def. make this again but next time I wont use as many chipotle chiles!

    Use Your CrockPot!

    This was a great recipe and it will be a staple in my kitchen! I put everything in the crockpot and let it go all day ( if it looks like it has too much liquid, take the lid off and hour before you use it and let it cook down). When it was time for dinner i loaded up the tortillas and baked for a half hour. How easy is that?! Excellent recipe!

    If an emigrant farmer or 4 star kitchen prepared this, they would go out of business. Do not insult this tasty recipe with the flavors of the world. It is very simple and can become even simplier with prepared cans. You have lost touch with people that depend on you to provide SIMPLE AUTHENTIC MEXCIAN RECIPIES such as El Charos. These people spend hours in preparation because of you. Cheese or chicken enchiladas can be prepared within 30 minutes that would even impress Raquel (sp). Cooking time would be 45 minutes. Dinner seved in total of 1 hour with no interruptions.

It was straightforward and I hardly changed a thing. I loved it, as did my guests, and will defintiely work this into my personal repetoire. Thank you Tyler- just fantastic!

    A really good on-the-fly for unexpected company meal.

    Made this on the fly for company. It was a hit. Used a roasted garlic/cilantro salsa in the mix, cut the chicken pretty small and made a bigger pan of smaller enchiladas to go further. Plus, we like the onions pretty carmelized with garlic to bump up the depth of flavors. Tip: if you use a specialty salsa like i did, mix it in equal parts with ranch dressing for a salad topped with finely shredded cheese to continue the flavors accross the whole meal. And, my wife took the leftovers for lunch the next day. Her whole office was jealous.

    Simple, Great Taste and Freezer Ready!

    This dish is easy to make with great flavor and texture We have made this multiple times as described here (i.e. chicken breasts). Two comments FYI: 1. Chicken thighs go on sale many times in CA, Flavor is great and are processed same manner (shredding, etc.) 2. Barefoot Contessa has said that roasting her chicken breasts is easier and has more flavor...a lesson she learned while running her store the Barefoot Contessa. We did that using chicken thighs. We made this dish with thighs, roasted in the oven. We saved money. Flavor and texture are wonderful. Dish is delicious either way. Great recipe.

    I often have a hard time finding recipes that make every one of my 11 family members happy! They are extreme picky eaters and are not very open to trying anything new. I convinced them to try this dish. When i served it, they were coming back for seconds and some for thirds! They beg me now to make this mouth-watering dish! The only change i made to this dish was that i didnt use the green chiles and i used only 2 chipotle peppers since they don't like heat in their dishes. Still turned out well. This is a guaranteed hit with anybody who loves chicken!

    this dish was soooooo good!! I would probably eat it at least twice a weak. although mine were real yummy i bet that yours are 10 times better than mine. i need to go make some more pronto!!!!
