Delicious!!! Very tasty! I added red peppers and jalapenos and it came out delicious!!!! Love it! Everyone liked it!

Made the tomatillo salsa by itself and served with Aida Mollenkamp's Three-Cheese Quesadilla recipe, and it was delish! Can't wait to make more of this salsa!

Tyler, I think you were Latin in another life. These enchiladas were the best tomatillo enchiladas I've ever had! I made them for dinner and my husband just about fell over and his favorite food is Mexican. They were delicious! If you love Mexican food, you will not be disappointed. Make them for dinner and be a hero! Tyler I wish you and Ina had a baby . . . it would be culinary perfection.

Simply amazing... Everyone loved this! I didn't deviate from the recipe at all... :- For the deli roasted chicken I stopped by a local peruvian restaurant and grabbed the chicken from there... It was amazing.

These had great flavor but they were a bit dry. I will definitely double the sauce in the future as I like my enchiladas saucy. I made these with corn tortillas which added to the flavor and texture.

We LOVE this dish! We've been making it for years and we make it everytime we go to a pot luck dinner. It's always a hit! The pan is always emptied in minutes! (We're always sure to leave a pan at home.

The Roasted Tomatillo Chile Salsa is what makes this dish! Put anything you want in the tortillas as long as you have the salsa, this dish is amazing every time.

I used to get a burrito at a local shop that closed down, so now when im craving mexican this is my go to dish. I like to put everthing in the tortilla the beans, rice, chicken, cheese and salsa. I don't add cheese on top so after its done cooking I can pick it up and eat it like a burrito! This is a time consuming recipe but def worth the effort. I will try and use a boxed mexican rice instead just for less cooking time
