This could not be better if it tried. I could eat it three times a day, every day and so could my husband.

The olives were a little tart but overall the sauce was good. Need to make a larger portion to put on the chicken and the pasta.

I made this recipe several days ago for the first time. I was having dinner guests and even though I had never made this recipe before, I broke all the rules and tried it out on "company." Well, let me tell you it was an absolute hit. This is the best Chicken Parmigiana I have ever had anywhere - and I've tried plenty in restaurants and at home. It is definately a keeper.

This wasn't my favorite mainly because the episode and recipe online don't jive and I was a little confused. This is a common complaint for this recipe and many others. Food Network has a bad habit of posting recipes that aren't exactly the same as what the chef demonstrated and it's frustrating. For example, a TB of water is shown in the recipe to mix with the eggs, but Tyler said to use what looks like at least a 1/2 cup of milk to "break down the egg proteins." The recipe also said to rip up the remaining basil and throw it on the chicken BEFORE it's baked... when Tyler had shown it thrown on fresh AFTER the chicken baked. My biggest confusion was whether or not to drain the tomatoes. The recipe says to drain them...Tyler didn't look like he drained them on the show. I did it his way and had a sort of watery sauce. It soaked well into the pasta and tasted nice....but wasn't quite what I expected and wondered if I should have drained the tomatoes?? Anybody know?? In any case, it was good enough to make again. The chicken was yummy and cooked perfectly. I thought it was a pretty nice and easy recipe...a bit messy and there were pots & pans & dishes a-plenty. But yummy enough, none-the-less.

Wow...this was absolutely wonderful. I served it to guests last night and it was a huge hit...make sure you do the lemon spaghetti (I used angel hair pasta with it...perfect combo. This will become one of my favorite menus to serve to friends. Add a caesar salad, good ciabatta, vino and you're in Florence!
Thanks so much Tyler.
