    GREAT!! As I wanted to save some calories and as I don`t like mayo either, I used jocoque intead of mayo and it works.

    So delicious! This is an awesome recipe because not only can you buy a whole chicken for sometimes as low as $77 a pound, you can use all the meat on the chicken as it all just falls off the bone. As an added bonus, you now have 4-6 cups of very tasty chicken stock. I love how tasty this recipe is as well as how budget friendly it is. My family didn't say a word as they gulped it down!

    Wonderful! I like to just buy a rotisserie chicken and shred it, then begin the chicken salad portion of the recipe. Saves me time!

    What a classy variation and it's an absolutely delicious sandwich. For a short cut, I just season 1 lb of chicken breasts with olive oil, salt and pepper then grill and shred.

    Made this for dinner tonight and my husband and adult daughter could not stop saying 'This is sooo good'! I used the leftover meat from a roast chicken earlier in the week, but followed the recipe exactly from there on. The flavors worked so well together. I loved the silkiness the olive oil gave the chicken salad.
