This is a simple way to dress up plain ole sour cream. Great on empanadas!

I love cilantro but find it is difficult to keep. How clever to combine it with the lime and the sour cream in advance, which solves my problem of the most perishable herb! And the end product is delicious!

I made the addition of one chopped serrano pepper for some kick. I also used a light sour cream to save a few calories. This was very good served with chicken empanadas.
