    This is my new favorite snack! I leave out the mint and its a quick throw together for when I am running around. It provides the same satisfaction as eating a bag of chips only 3/4 the calories! I keep cucumbers on hand in the kitchen and my slicer close, toss everything into a ziplock bag and bring it everywhere. I love the sesame flavor when Im feeling snacky and I dont even crave the chips anymore.

    It looks like shiso leaves in the photo, but since it's in the same family as mint, I could be wrong. I'd use shiso, though, and add some edamame, and maybe a pinch of bonita flakes to add a smoky flavor to this salad.

    Loved the mint, though if it bothers you then substitute cilantro. But one cook says that next time s/he'll use less sugar. What sugar? Wasn't in the list of ingredients.

    I eat a lot of sushi/Japanese and one of my favorite appetizers is Kani Su which is this plus seaweed salad and usually crab stick. I have been trying to duplicate the recipe forever and this is it. I add just a dash or two of red pepper flakes for an occasional hint of heat. Great appetizer if youre serving spicy Asian cuisine. I serve them in a sushi soy dish with some crab stick on top and its a HUGE HIT!

    I love the smell of these, but the mint has to go. If I make it again, I'd make the cucumber slices thicker, increase the marinade slightly, and leave out the mint altogether. I even reduced the amount significantly but it just wasn't good with it at all.
