Crunchy Roasted Rosemary Potatoes

Ingredients

  • 6 to 8 large Yukon gold potatoes, cut into large chunks
  • 4 sprigs fresh rosemary
  • Kosher salt and freshly ground black pepper
  • Extra-virgin olive oil
  • 6 strips bacon, fried and crumbled
  • 1/4 cup grated Parmesan
  • 1/4 cup pine nuts, toasted

Directions

Preheat the oven to 375 degrees F.

Put the potatoes onto a baking sheet. Roughly tear the rosemary and scatter it over the potatoes; season them with salt and pepper and drizzle with olive oil. Toss the potatoes well to mix all the flavors and put them in the oven. Remove them after 30 minutes and toss them again. Continue to roast them until they are browned and cooked through, about 30 to 40 minutes more. While hot, top with crumbed bacon, Parmesan and pine nuts. Serve immediately.

    I made these for my New Years Eve dinner. Everyone loved them! I roasted the potatoes ahead of time and then just warmed... them up when the rest of my meal was cooking. Just before serving I added the cheese, nuts, and bacon. Very easy and tasty!Read more

    This was an easy and delicious recipe. The flavors are amazing together. The only thing that I can say negative about it was... the pine nuts, beacon and cheese fell to the bottom of the plate so that not every bite had all the flavors. (pretty much my Husband ate all the potatoes and had a pile of nuts, beacon and cheese). :) He of course ate that pile and thought it was the best part. :) All in all a winner.Read more
