Ingredients

  • 2 large egg whites, at room temperature
  • 1 teaspoon water
  • 1 dozen pesticide-free edible flowers, such as violets, marigolds, and rose petals
  • 1 cup superfine sugar

Directions

In a small bowl, combine the egg whites and water; beat lightly with a fork. Dip a paint brush in the egg whites and gently paint a flower – covering the petals thoroughly but not excessively. While still wet, gently sprinkle the coated petals with the superfine sugar. Put the crystallized flowers on a sheet pan lined with waxed paper to dry for 12 to 24 hours. Use to top cakes and desserts.

    This is a nice recipe but I would suggest watering down the egg whites even more. You can also purchase these in the United States at www.crystallizedflowerco.com

    As far as I'm concerned, I prefer to order them from France where they've been making them for centuries with real flowers. They are extremely pretty and delicious:

    After painting the egg wash onto about 12 of the petals (with 48 still to go I pu the egg wash into a misting bottl and mistted the petals instead. The last 48 went by super fast and turned out perfectly crispy and crystalized. Thanks for the starting point!
