This easy to make egg salad recipe was a HUGE hit with my family. The lemon juice adds a lightness that really makes this recipe sing out that it's summer picnic time.

The lemon adds a really great flavor. I doubled the recipe and served it as one large sandwich on a loaf of lightly toasted challah bread for mother's day brunch. I sliced the loaf in half horizontally and scooped out some of the bread to make room for more egg salad filling. Sliced into small sections to serve. Great presentation!

any sandwich that is cheap to make is a hit for this college student! very good very basic egg salad recipe. great way to use avacados that didn't make it into last night's guacamole.

This recipe was very simple to make and tasted fantastic! Although, I tweeked it a little. I substituted the watercress for finely chopped celery. Rather than serving on toasted whole grain bread, I served it on soft white bread without the avocado. It just melted right in my mouth. Mmmmmm... Thanks Tyler!
