Delicious blend of the sauce, eggplant and cheese! I used only half of what the recipe called for, and it was still a LOT!

I tried this recipe for my Italian Mother's Day lunch and it was a hit with everyone! The recipe was so easy to follow that I didn't even have to write it down.

This is a tasy recipe. For my lactose interolarant child I serve the eggplant after being fried with the sauce on the side for dipping. The rest of the family layers sauce & cheese on at the table. Everyone loves this even the 6 & 4 year olds. enough said.

I've tried eggplant parm a few times and was never really impressed. My husband asked me to make it for him....and WOW! It was so awesome, i brought some to 2 of my neighbors...who in turn, asked me for the recipe the next day, exclaiming that it was better than any restaraunt!

I made this dish for a housewarming party my mother and sister planned for me. Although it came out somewhat watery, it tasted very good and the guests enjoyed it. I followed another reviewers suggestion and used a disposable turkey pan which worked fine. The finished product is tastey but because it is so labor intensive and time consuming to make, I'll probably not make it again.

We made this for dinner one night when we harvested eggplant from our garden. The dish was amazing! We vowed to fix it again on a night when we would invite people over to enjoy it with us because it makes A LOT! Hands down - Best Eggplant Parmesan we've ever made!

I love the recipe, but this makes A LOT of food! If I had known this before starting the recipe, I would have cut the amounts in half.
The sauce is divine, though. I plan to use it on many, many different pasta recipes!

This recipe was so good even the eggplant haters in my family loved it!I wasn't hard to prepare but it sure disappears fast around my house.
