I loved this recipe! The mojo was fantastic. I cooked this on a grill pan indoors and I loved the smokiness that the chipotle peppers added to the meat. Cooking the veggies second was great because they got a little bit of the burnt meat bits and mojo on them--very tasty!

Great recipe. It is time consuming but make them often and you will learn you own short cuts - it is worth it. I have never used jarred salsa, I make pico instead which adds to the fresh taste of the fajitas. This is a versatile dish. I have omitted the chilies when kids are eating with us and it is still great (just put some hot sauce or jalapenos on the table. Since you are assembling your own you can put some cheese or whatever you like out which makes this very kid friendly.

This marinade is delicious! I used meyer lemons in place of the orange and limes, because that's what I had on hand. I also used strips of boneless, skinless chicken thighs. It was so good, not a drop left over.

Amazing fajitas! My fiance was in love with them. We couldn't find flank or skirt so I sent him to Whole Foods and he came back with flap steak that the butcher recommended. I was hesitant because I had never had or cooked with this meat before but it turned out amazing. I was worried about the amount of heat from the peppers in adobo sauce and the amount of orange juice but I followed the recipe exactly and it was amazing. I did marinate it for more like 8 hours because I did it before work and everything came out amazingly. I will never use another fajita recipe ever!!

This was a great recipe better than any mexican resturants we have around here and as close to authentic mexican, we used tri tip steak instead of the flank or skirt and found the tri tip more tender and it runs about the same price as the others.

Better than any restaurant fajitas I've ever had. I cut the number of chipolte peppers from three to two and the marinade still had plenty of pep. I did them on a gas grill and they turned out slightly drier than we like. Next time I'll make a small amount of cooked tomato and salsa sauce to go on the side. But the flavor was fab.

Wow! Best fajitas I've ever had. The marinade is amazing! No need to ever eat fajitas out again. Even my picky 7 and 10 year-old children raved about these.
