    This was ok but wayyyyy too much lime, especially in the guac !!! Not sure I would make again

    love this recipe! I live in New Mexico so fajitas are found at many local restaurants n this recipe in particular's exactly what I was lookin for. I have a cast iron ridged grill pan so I heat it up over medium n once preheated, turn it down jus a bit and everything cooked perfectly. the 1st time I made this, I followed the recipe exactly and ended up with very tender beef and the great tasting veggies but I have my own guacamole recipe, so I skipped over that. after that first time, though, I cut up my meat (beef and chicken and let it marinade in strips and for some reason my beef ended up much more tough and harder to eat while the chicken has always kept a great texture and perfectly tender regardless. highly recommend this recipe! p.s. I added extra chipolte chiles and it seemed a lil strong for me.. for extra spice, I'd say stick with the 3 chipolte peppers as listed but add diced jalapeno to the marinade. if you eat salsa with them that should provide some extra spice, too.

    Incredibly good! I make this at least once or twice a month. I also make it with chicken and it is equaly good. I use the leftovers and make a curry with it by stir frying it with diced tomatoes, curry powder, tomato paste and heavy cream served over basmati rice. Yum!

    Yummy! I actually put it all in my crockpot in the morning and let it all simmer together all day (minues the onion and peppers, I added them later. It was delicious!

    Wow! I had a mean fajita recipe but this was amazing. I used chicken instead of the steak and cooked it all in a skillet. I also cooked the veggies with the chicken instead of in a seperate skillet. I used to work in a restaurant that cooked very average fajitas and I learned that is why. Don't let the veggies over power the marinade and meat flavors by cooking by themselves. The key is for sure is the chipotle's with the adobo sauce.

    I made these fajitas the other night when we had company. I usually like to make changes to recipes so that they include all the yummy ingredients that I like! I used flank steak and chicken. I also used sweet peppers, yellow and green squash and mushrooms for extra veggies. Last but not least, I added fire roasted green chilies, jalapeno slices and instead of using the chipotle chilies, i just used the adobo sauce that they come in. It was very delicious and I will be using this recipe every time I make fajitas.
