Ingredients

  • 2 ears fresh, sweet corn, cut off the cob
  • 1/2 medium red onion, diced
  • 2 green onions, white and green parts, chopped
  • 1 1/2 pints cherry tomatoes, halved
  • 1 avocado, halved, pitted, peeled, and chopped in chunks
  • 1 jalapeno, sliced
  • 1/4 bunch fresh cilantro, leaves chopped
  • 1 lemon, juiced
  • 1 lime, juiced
  • 1/4 cup extra-virgin olive oil
  • Sea salt and freshly ground black pepper

Directions

Combine all ingredients in a large mixing bowl, tossing to coat. Put the salsa in a sealable plastic container and take to a picnic, if desired.

    I tried this recipe a few years ago and lost my copy. I've spent many times trying to find it again because my wife loved it. I've taken it to many parties and family gatherings and always get rave reviews. This works great from barbeques to christmas parties. I'm serving it with carne asada tomorrow!

    This salsa is amazing! It's refreshing and the proportions are perfect. If good fresh corn isn't available or I'm in a rush I usually substitute extra sweet canned corn. Also, if I'm not sure if guests like spicy food, I'll sub in 1-2 cloves of finely minced garlic and an extra green onion for the jalapeno. Sometimes I add a dash of cumin if I want a little smoke in the background. Every time I make this I get asked for the recipe. It's my go-to salsa recipe and a summer staple in my fridge. Absolutely delicious!

    This is one of the best summer salads ever! The taste is clean and fresh. I made it for a bbq and everyone asked for the recipee. I mixed everyting the evening before except the tomatoes and avocado which I added just before serving. This is definately a keeper!
