    You can make this even if you dont have wine, just skip the step. It is delicious! Its a dish that you can proudly say you made from scratch and it tastes like its from a fine restaurant. I love serving it!

    Tasted fabulous. We added additional red wine to the broth during the last 10 minutes of simmering and it came out great.

    Per other reviews, onions *must* be sliced thin to caramelize within his time frame. First time I made it, I thought I was slicing thin, but apparently not enough. Second try, I sliced as thin as I possibly could - less than 1/8" - and it was perfect. Don't make my other first try mistake ? subbing 1/4 c. healthier olive oil for half of the butter. Live and learn. The onions did not absorb the oil and it was an irretrievable mess. Lastly, choose an onion variety according to your tastebuds as a sweeter onion will result in a sweeter soup.

    I have made a few onion soup recipes in the past. This one is very tasty and not too salty. I toasted the french bread in the toaster and melted the cheese on top in the microwave, easier than the broiler which I never use. I substituted 2 "Knorr" chicken bouillon cubes for most of the salt. I like the depth of flavor the bouillon adds. Very good directions,too. A great recipe.
