Took a lot longer to cook that I expected, but well worth the time. This is a keeper!

We really enjoyed this recipe. I will definitely make this recipe again, but with twice as much broth. It was really quite good. For those of you who say 25 minutes is not long enough to carmelize the onions, you may not be slicing the onions thin enough, or may not be using a soup pan with a large enough surface area on the bottom. You may even want to carmelize the onions in a saute pan and then transfer to the soup pot at the point of adding the broth. Yum Yum!

An excellent French Onion soup. Combined Gouda and Provolone instead of Gruyere. I have been tweaking my own recipe and couldn't get it nearly as good as this!

I've been looking for a good French onion soup recipe, and finally found it! It took more like 40 minutes to caramalize the onions, and I doubled the bay leaves and thyme, but otherwise, I was really impressed with this recipe!

Oh my gracious!!! This is the best french onion soup I have ever eaten. I didn't have thyme the day that I made this soup so I left it out but the soup turned out wonderful. My onions did not caramelize in 25 minutes--took closer to 45 minutes. Will definitely make this over and over again.
