Ingredients
- 4 ripe, black plantains
- 1/4 cup vegetable oil
- Salt
- Lime wedges
Directions
Peel the plantains and cut them in 1/2 on a bias, then slice in 1/2 lengthwise so you have 4 pieces.
Heat the oil in a large heavy skillet over medium heat. Fry the plantains until golden on both sides, about 5 minutes per side. Remove to a plate lined with paper towels and sprinkle with salt. Serve with lime wedges.

These are fantastic, just make sure the plantains are really ripe and totally black.

you can also eat them with sour cream...add a little salt to the sour cream...yummy!

Tyler, I love you, but you did not get this recipe from a Puerto Rican. I was born and raised on the island and I can guarantee that you can skip the salt and the lime wedges. Ripe plantains are SWEET, and they DO NOT need ANY added ingredients when you fry them.
You can eat them for breakfast in a tortilla, and for dinner and lunch with either beef, chicken, or pork. You can fry them, bake them, or boil them. Green or ripe, they are delicious. However, I prefer them ripe any day.
