    Woke up wanting egg Benedict and while I didn't have English muffins or Canadian bacon, this was just what the doctor ordered! I substituted toast and regular bacon (crumbled on top and WOW! My wife and daughter who are not egg fans loved it. Thanks for the recipe!

    Even with only half the ingredients it turned out great! I didn't have lemon so I substituted it with orange juice, it did the trick! I also put in Nando's hot sauce instead of the cayenne. I was wonderful. I did end up putting the egg yokes in my mixer to save my arm. I wouldn't say the yokes doubled in size over the double boiler, but they did thicken significantly

    I used my mixer with wire whisk attachment to make it a little easier...added Red Devil hot sauce instead of cayenne (pretty much the same thing...finished the cooking over the water that I poached the eggs in....very good recipe and very easy.

    This hollandaise sauce has the T.Florance perfect touch. I used it on asparagas tips and it was awesome. Tonight, crab legs. Yummy. Mary

    I've tried several different recipes and I found this one to be the best. It's actually easier than Alton's recipe and definitely tastes better.

    It was a hit! It took me 15 mins to get the sauce to the right consitency(thick but It came out good and the lemon is perfect otherwise it will end up tasting to pure eggs, instead the lemon gives it a twist, perfect, will make it again!

    This is a no-fail recipe! I used 3 jumbo egg yolks as opposed to 4 (these suckers were huge! Absolutely wonderful.
