This really was the best steak I everate, much less made. A couple of tips - 1 It's okay to use dry herbs if you can't find fresh, but dry are much more potent, so you only need a teaspoon or so. 2cut back to 2Tbsp fresh parmesan, as it's such a rich cheese if you use any more it won't be eaten. This is a beautiful dish!

I found that the horseradish and garlic paste made an excellent crust when baked..I served this roast at a party and it was the star.
