I made this for our Xmas dinner this year and it will now become our family tradition. Thank you for the easy step by step instructions and the "ultimate" Holiday Dinner.

Made it for Christmas Eve Dinner for the 2nd year in a row. Guests start looking forward to it weeks in advance! Used much more garlic and let the rub soak in for about 1 hour before roasting. Serve with creamy horseradish on the side. Easy, juicy and full of flavor.

Learning from ALL your experiences I ended up with the PERFECT meal! I had a 4.8lb roast (which I got from the grocery store -and I dare not ask the butcher for any favours - she wasn't very impressed when I asked for a piece from the 'lower' part. Anyway - I took it home, cleaned it with a fresh lime - and seasoned it with 1/4 cup of Kosher salt in addition to the other herbs. Baked Uncovered with a c of water in the bottom of the pan. 450 degrees for 15,400 for 8, & 325 for another 1.75 hr or to 140 degress. Covered with foil for another 20 - came out medium at 150 degrees. Many do not like the 'pink' in their meat - so I put some pieces in the oven with a little of the au jus at 325 for 5 minutes. They were still moist and tasty! :

I decreased the garlic by 2 cloves and cooked a little longer until internal temp was about 160 (approx 2.5 hrs...everyone raved and said it was wonderful!

I followed this recipe to the T, although I felt that 1/2 cup of salt was too much. I should have gone with my instinct. The roast was disgusting, you may as well lick a salt lick. In the future I would use only 2 tablespoons of salt. Also, DO NOT use the drippings for gravy or you will be throwing out your yorkshires as well as the roast. Completely spoiled our Christmas dinner
