I make this at least once a month! It is even better the next day!
The only thing I do differently - I don't put the fresh herbs in the oil at the beginning. Instead I use sage flavored sausage, and add dry herbs later. I do prefer fresh herbs, but I don't normally have sage and rosemary on hand!

It's snowing outside and I just served this awesome soup to my family for a lazy Sunday lunch. I used chicken sausage and sauteed out of the casings. Also used whole grain pasta. Simple, tasty, perfect.

This was so easy! It turned out great! My husband said it transported him right back to Italy. The only changes I made were to use 2 14oz cans beans and spinach instead of parsley. Delicious!!!

I made this yesterday and it was a big hit. I will definitely keep this recipe. The only thing I did differently was to add a small can of tomoato paste... superb. I froze up the leftovers for lunches... definite comfort food.

I'm a new cook and this dish was really easy to make. The sausage and herbs gave it tons of unique flavor. However, I like my soup a little more soupy than what I got. Next time I would use either less pasta or more stock. I skimped about 12 ounces on the cannelloni beans and the soup still came out very chunky. If that's your preference, don't change the recipe at all.

I have made this recipe many times and shared it with several people(recipe and the finished product. It is the best go to meal on a busy schedule. I love to cook on Sundays afternoons. This makes enough for Sunday dinner dinner later in the week and freezes well. Easy to make and personlize.

I have never liked minestrone soup until I made this recipe. The flavor is incredible and this recipe was very easy to make. My husband couldn't stop talking about how much he loved this soup and ate every last bite. I usually have to throw away leftovers but this time there was none! I will probably add more sausage the next time I make this.
