A big hit at my dinner party tonight! I added quartered onion and quartered idaho potatoes (skin on make sure to be really generous with the salt & olive oil. got a 7.5 lb chicken and cooked it for 2 1/2 hours... perfect! I also added a little bit of sazon seasoning.

I've made this recipe quite a few times, and it's always moist and delicious. We routinely add carrots and parsnips in with the potatoes. Tonight I'll do as another poster suggested and add some broccoli at the end. Thanks Tyler!

Simple flavors and pretty juicy. I'd make again but definitely not something with a "wow" factor. Good nonetheless!

Easy and delicious! I add brussel sprouts or broccoli in for the last 45 minutes to make it a complete 1 pot meal - they come out so nutty and delicious. I think I might throw a little onion in this time based on an earlier post.

I've been vegetarian for 20 years now. Lately I've been craving a roasted chicken. After reading this recipe I might fall off the wagon.
