Mac 'N Cheese with Bacon and Cheese

Bring a pot of salted water to a boil over high heat. Add the macaroni and cook for 8 to 9 minutes, until al dente. Drain.

Preheat the oven to 400 degrees F.

In a small saucepan heat the milk with the thyme sprigs and 2 garlic cloves. Melt the butter in a large, deep skillet over medium-high heat. Whisk in the flour and cook for about 1 minute, stirring constantly, to keep lumps from forming. Strain the solids out of the milk and whisk it into the butter and flour mixture. Continue to whisk vigorously, and cook until the mixture is nice and smooth. Stir in the 4 cups of the cheese and continue to cook and stir to melt the cheese. Season with salt and pepper. Add the cooked macaroni and the parsley and fold that all in to coat the macaroni with the cheese mixture. Scrape into a 3-quart baking dish and sprinkle with the remaining 1 1/2 cups cheese. Bake for 30 minutes, or until hot and bubbly.

While that bakes, heat a saute pan. Add the bacon, render the fat and cook until crispy. Add onion, garlic and thyme leaves and cook for about 5 minutes to soften the onion. Season with salt and pepper.

To serve, scatter the bacon mixture over the mac and cheese. Use a big spoon to scoop out servings, making sure you get some of the smoking bacon mixture on each spoonful.

This is the only mac n cheese recipe I use. Usually I forgo the bacon and onion topping, but works well with it as well. What I love most about it is it uses only one type of cheese so you don't get bogged down by having to buy fifty different types of cheese for it. I was a little disappointed with the result. Such wonderful aromas as I was preparing the meal - the garlic & thyme in the milk, the onion, garlic and of course, the bacon. With 2 picky kids, this recipe is definitely a winner in my household! They gobble it up every time I make this. Some variations that I do is I go very heavy on the thyme - about 8-10 sprigs. You can really taste the flavor of the thyme this way. Since my kids are skinny, I also go very heavy on the bacon and mix up the cheese a bit. Megpanda-once you have the smooth milk mixture, take it off the heat. Then add the cheese slowly, a little at a time, waiting to add more until the last addition is fully melted. This will keep it from getting gritty. You are probably adding the cheese while it is too hot and adding too much at a time. item not reviewed by moderator and published

I love this Mac N Cheese. It is the best I've ever had or made. I always make a double batch. Megpanda-I have not had the gritty problem with this recipe. I follow it to a tee and never had a problem. I'm not sure what would make it gritty? You definately don't want to use Velveeta! This recipe, like everything else of Tylers, is wonderful. 2 things I would change - I would use more bacon and then I would cook it before I cook the onions to crisp it up a little more. Here is my problem . . . every time I try to make a Mac and Cheese recipe, the sauce turns out gritty. Which means that it's not so much a sauce as chucks of gritty cheese on the noodles. I make the roux and cooked it for 5 minutes and I heated the whole milk before adding it to the mixture. I used good quality white cheddar cheese. This is driving me crazy! What can I do to fix this? Is it the cheese? Is it supposed to turn out this way? I made this for Thanksgiving. We had 11 people for dinner, 9 of them between the ages of 15 and 23, and Well... Today is Tuesday, and they are STILL talking about this mac and cheese. I did make a few changes.. First, being a true southern girl, I used almost and entire pound of bacon, mixed most of it throughout the casserole, and topped it with the rest. Now, just to UP the bacon factor, I skipped the butter in the roux, and used the bacon fat. (it's once a year people, relax! I also sauteed the onions in the fat, and mixed them throughout the dish, instead of topping with them. I used a GOOD sharp white cheddar (2 blocks, shredded in the sauce, and added 3 decent slices of good ole Velveeta for stability. Topped it with shredded sharp yellow cheddar, (didn't use the extra thyme on top, or the parsley and I'm tellin' you, I think I've tried conservatively 10 to 12 mac and cheese recipes this year... this is THE one. I did top it with a bacon, panko, butter mixture instead of the thyme, onion, bacon mixture. I also used half heavy cream and half whole milk to up the richness. I always make from scratch macaroni and cheese. This recipe is delicious and a great twist on classic mac n cheese. I used extremely sharp white cheddar cheese for the sauce and then used sharp white cheddar grated over the top for the last few minutes of baking. I also mixed some cooked bacon into the mac n cheese before baking and then put some of over the top after it was finished baking. I`ve done it a couple of times already and everyones loves it. The second time I did it I substituded 2 cups of milk with heavy cream and it helps on the creaminess and thickens it quicker too. Agreed with all the other comments that the quality of the cheese is super important, one of the times I compromised :( don`t do it. The only thing I will try next time I make it is to probably add a little bit of mascarpone or cream cheese. There`s a point that the cheddar gets too bitter. Ok, I have made every Mac & Cheese recipe known to man and this is definitely the best yet. No matter what recipe I have ever used, I always add a couple of extra cups of cheese...because I like a real cheesy flavor. The bacon, onion, garlic and thyme added the extra zing. I love this, but I do a couple things differently. I used about 1 1/2 pounds of a nice smoked gouda instead of the sharp cheddar, I added mushrooms and sun dried tomatoes in with the bacon mixture and mixed it in the pasta instead of putting it on top. I thought this was very flavorful, I added one more clove of garlic and 5cups of cheese inside the sauce because some reviews said there wasn't enough cheese flavor. I did have one complaint, the cheese mixture tasted slightly gritty, not sure if it was something i did. The flour was definitely not lumpy and it was a smooth consistency, so not sure what happened. Cut it in half for an easy dinner for 2 (with a green salad). Make the full recipe for a side dish for a bigger group. I used skim milk and reduced fat (2%) shredded cheddar, and it was still really good. If you're going to make this recipe, you need a TON of cheese. I got the amount it called for, then nearly doubled it after my sauce had almost no flavor. Used white vermont cheddar, no, it's not the most expensive in the world, but when you're used to the fifty cent mac in a box, it's pretty darn expensive. I will admit this, after everything came together, it was darn good. The bacon, onion, thyme topping rocked my socks. I will say it doesn't re-heat well, so don't bother fixing this whole recipe for two people. A lot of money will sit in the fridge, only to be tossed a few days later. I'm thinking about making it again for a family get together where it will surely all be devoured. So, overall, 3 stars. I made this as a side last night for dinner and overall it was fairly simple to put together. I was a bit surprised when tasting it, it needed something else in it...I wasn't sure what it was, but it was missing something. We left off the bacon topping, the Mac & Cheese was enough, very rich smooth and creamy great flavor! The Cream sauce dilutes... the cheese flavor. A Vermont Extra Sharp, or a Super Sharp Cheddar is a must. This combination of white cheddar, thyme, garlic and bacon. What an array of flavors. I used white cheddar cheese regular not sharp cheddar cheese. I think that gave it a creamy texture. I am always leary about using cheddar since is not not the best at melting. The white cheddar was fantastic. I have made this mac n' cheese recipe conservatively 30 times, and it is fantastic! Some tips: I always use cavatappi because its structure allows for a satisfying, noodle-y texture, and the cheese gets caught inside! Always use the SHARPEST cheddar you can find and the best quality cheddar; always makes a difference. I made this recipe for my family last night and it was easy to make and turned out great. A few things I should mention...the Vermont Sharp White Cheddar Cheese Tyler mentioned is great but pricey. I bought 3 bars of cheese since I was not sure how many cups you get out of each and you only need 2 (two bars makes 7 cups shredded)...they run about $5.00 each on sale. Also, the sharp cheddar is great but does give it a slight sour taste. I would recommend making it with half sharp cheddar and half another mild cheese. My kids liked but said after a few bites it was too sour for them. They ate the bacon off the top which was a great touch. My family enjoyed the meal, but I had a few minor changes I would make to it. I didnt have fresh herbs on me, so I used some from bottles, and I would change the amount of parsley becuase that was a little overwhelming, and the cooking time said 27 minutes, but that made it too crispy, so mabye twenty minutes would have been better. I like it best with jumbo elbow noodles, cooked only half the time the box says for al dente. It's great with a mix of sharp cheddars (4 parts), parmesan (1 part), and pecorino romano cheeses (1 part). This was excellent! The only thing I deviated on was the amount of bacon and onion in the topping, I doubled the bacon and halved the onion. I always make homemade mac and cheese for Thanksgiving, I have several different variations that I like to use just to change it up. This year I wanted something a little more "adult." I altered this recipe as well ( just a bit.) I also had to make a lot! Now I used they extra sharp white chedder but also used fontina which is great for melting (throw the fontina in first and mix then chedder) I also used a bit more bacon I mixed with the mac and cheese and sprinkled a lil on top with some freshly grated parmesean, everyone wouldn't have minded a lil more bacon either! I made the bacon somewhat cruchy not over done though. Also used the bacon grease for the rue which gave it a lil more flavor! Now the onions I actually used a lil less of and still could have cut back a bit more which i was surprised because I love onions, also recommend cooking the onions all the way! The thyme was a pleasant surprise, and definitely makes the dish something special! I had 12 people over for Thanksgiving and it was a smash hit! I have many request to make it again! I used extra sharp cheddar (not white cheddar), and also used a wedge of freshly grated parmesan, reducing the amount of cheddar. I've made a lot of Tyler's recipes (loved his enchiladas the most) and I've got to say that this recipe was not worth the time and effort, as it turned out really bland and boring. I didn't like Alton's Mac & Cheese, either, although I like a lot of his stuff (except for the current season, which I am finding dull and uninteresting) maybe next I'll try his little fillip at the end of his show, the so-called "kid-friendly" Mac & Cheese. I made this dish, and overall it was pretty good. I used sharp white chedder cheese (I love white chedder!), but like some other people mentioned, I think next time I'll mix in some mild regular chedder. The sharpness and tang of all the white chedder was a little overwhelming. I also incorporated the bacon and onions into the dish as others suggested, and I really liked this change. However, next time I will add more bacon and about half the onion (never thought I'd cut back on onion in my food, but too much onion kind of ruined it for me in this dish). I made this for dinner last night and was very pleased with the results. I hadn't been to the store, so I just used what I had on hand--skim milk, and fresh chives instead of the thyme and parsley. I also skipped the bacon topping, so I added all 4 garlic cloves to the milk mixture. Very flavorful. I made this macaroni and cheese for dinner tonight after seeing Tyler make it on the show. Funny how it never looks the same on my stovetop as it does on the TV... I was really worried because when I was making it, it seemed too runny. I ended up letting it boil a bit on the stove to try to thicken it, and then probably overbaked it in the oven, so it actually turned out to have almost no melt left to it. And I mean it was runny, soupy, could barely see the noodles through the liquid when I first mixed it all together. My boyfriend said that he liked it, but I've grown up on smooth Velveeta mac 'n cheese, so the crunchiness was hard for me to get used to. I will agree with others that it was a bit bland, but I'm sure if I had done more than "smash" the garlic as the recipe told me to, it would have helped. item not reviewed by moderator and published
This was so good! I made mine with sharp white cheddar and parm. I also added the bacon into the mac 'n cheese along with parsley. I had to cook mine a little longer to get it nice and crunchy on top. The family loved it! Thanks Tyler. item not reviewed by moderator and published

There are two kinds of people. One type likes food naturally flavored allowing the food to speak for itself. I made Tylers french onion soup and it too was bland. The other type likes to add to the flavor of the food and kick it up a few notches... one way to kick this flavor up would be to fry up the bacon first. Use the bacon grease to make the rue. (heck even use the bacon in the dish instead or just on top).. And skip the expensive less flavor cheese. Any kind will work.. Velveeta if you feel the need.
