I picked fresh mint leaves and used fresh new potatoes, unsalted butter. This recipe is fantastic. A great alternative to the typical garlic potatoes. It went well with grilled red snapper and crap meat hollandaise sauce.

This dish is a great option for regular mashed potatoes. It gave my meal a bit of gourmet flair.
