Tried this recipe tonight. I would have given it more stars, but I didn't like the sweetness of the parsnips. This was my first time eating parsnips so I didn't know what to expect. My family thought it was okay, but also didn't care too much for the parsnips. Not bad...but I will not be making this again.

Followed recipe as written except added slivered green onion to milk/butter mix instead of chives. Very good. Seriously, any mash with butter and cream can"t be bad! Do like to sneak in the parsnip since I'm not normally a fan.

Will be adding this to my menu rotation; But would note that you should cook the parsnips and potatoes in seperate batches Or Put parsnips on first adding the potatoes about 10/15 min later. they take a bit longer. And couldnt find the fresh chives so I too used green onion and loved it!

Having never tried parsnips before, I had no idea what to expect. It was an interesting spin on plain mashed potatoes.

I had never thought of combining mashed parsnips and potatoes, but since we love parsnips I gave it a try.I didn't have chives or green onions on hand, so added about 2 T. sauteed finely chopped onion. Used a hand mixer with great results. Thank you for this yummy twist on traditional mashed potatoes!

THE COMBINATION IS SUPERB AND A WONDERFUL WAY TO SNEAK THOSE VEGIES INTO YOUR KIDS. THE PARSNIPS ADD A NEW SLIGHTLY SWEET DIMENSION TO THE - OH SO GOOD - MASHED POTATOES. A NEW COMFORT FOOD. EASY AND DELIGHTFUL. GOES INTO THE 'FAVORITES' FILE.

I was really taken by suprise with this one! The parsnips add such a pleasant, slightly sweet flavor to the potatoes; it's just delicious, with the cream and butter. Thanks Tyler for the excellent recipe! A few notes: Definitely use the food mill or hand mixer, as mentioned, as the cooked parsnips can be hard to negotiate otherwise. Also, I added a half-cup finely-chopped green onions to the finished recipe, and the taste is amazing. Really kicks up the flavor. Definitely try this recipe; you'll love it.

I've been using this recipe for a few years now. Like other people mentioned, it "kicks up" normal mashed potatoes with a nice rustic, fresh taste. Even people who don't normally like parsnips will appreciate this dish! And using cream instead of milk really makes a difference!

I LOVED THIS! It was easy to make, it was also a good change from regualr mashed potatos. It tastes a lot like them, but more rustic and deep flavor. Good!
