I was surfing the web for an easy mash potato recipe. I'm a newlywed and not the best cook, so I wanted something easy to put together that my husband would love. Thankfully, I had all the ingredients at hand (cream one of those items you usually don't have, minus the chives and went ahead with the preparation. I was so amazed at the simplicity and was eager to taste the results and sucess! My husband aproves and he is telling me to make sure I keep this recipe. I will comment about a few modifications: since I didn't have chives, I chopped a little parsley and mixed it in at the very end. Also, I added some chopped slow-cooked bacon for extra flavor, along with a couple of teaspoons of garlic. Bottomline, you can't go wrong with this recipe!

I used a food processor to cream the potatoes and only added the heavy whipping cream until I had the potatoes at the desired consistency. I didn't have chives, but these were the best mashed potatoes ever. My whole family loved them!

These mashed potatoes were absolutely superb--however I had to leave out the bay leaf and chives as some other reviewers mentioned. Also instead of heavy cream I used half and half and buttermilk. And instead of boiling the potatoes, I sliced them really thin and layered them in a baking dish with the milk and some cheese and baked them until it was golden brown on the top. And instead of eating them I threw them in the trash. Great recipe! Will make again!

I am kind of an artist with a potato palette, but this is the best mashed potato I have ever made. I bought a food mill just to make mashed potatos and it was well worth it for this recipe alone. Much better than my old manual masher.

I have been looking for a couple months for the perfect mashed potatoes to make. Only tried two recipes but both just weren't perfect. These are! They are simply creamy and delicious. The boyfriend still really wants garlic mashed potatoes, but these are so flavorful already. I kept the skins on, we both like the skins in our mash, and I didn't use the chives because I didn't feel like buying them - doesn't make a difference, they are still great.

The salt goes in the water that you drain off. Gives flavor, not saltiness in strength. Same concept as satling the water for pasta.
