    THIS RECIPE WAS AWESOME! I used squid, mussels and even a lobster tail! Extra white wine was also a nice touch!

    my daughter asked me to prepare the dish for her 9th birthday (Nov. 16, and its a success....felt like "Mr. Ultimate" himself is on my side while doin the job. I made everybody happy specially my gal. Not bad for a first timer huh!!! 4 stars because its not that perfect though, but close enough.... Prayers helped a lot for a first timer like me.... Praise God!!!

    This recipe sounded wonderful, but it was very time-intensive (and expensive. Ordinarily, this would have been ok with me, but the flavors were very strong, and it wasn't like any paella we had in Spain.

    I modified the recipe based on ingredients I had at home, (for seafood, I used only shrimp and I added celery, fresh tomatoes and mushrooms. I also used mexican chorizo instead, but the result was wonderful! Since I went to spain 8 years ago, I've been wanting to make paella, and I finally did and it was not as difficult as I would have expected. I suggest experiment with your favorite ingredients and enjoy.

    Tyler's recipe for The Ultimate Paella is much better, just follow amounts on this recipe because the other one makes a HUGE amount. A little white wine to deglaze the pan after removing the chicken and sausage adds an extra zazazing.
