After watching this episode, I knew I had to try this recipe. I didn't have shallots or fresh rosemary on hand, so I used a quartered medium yellow onion and dried rosemary. Instead of using water for the pan sauce, I used chicken broth, as well. This dish was simply delicious, and so quick and easy to prepare! It also looked elegant -- perfect date food! I warmed up some garlic bread with it, but it'd also be great over couscous to soak up the pan sauce.

The best chicken I think I've ever had. Truly. I added fresh diced tomatoes for color and used chicken stock with a bit of sherry for the deglaze. This will be a regular for me.

This chicken is a breeze to make! It's probably the best roasted chicken I've ever had. A few adjustments: I added a little white wine for the sauce. Also, the chicken breasts took a lot longer to cook than suggested on the recipe--use a thermometer.
