Great textures, but strange taste. You must like sweet and salty together to understand this pie. Lots of great responses to it, but I am still iffy about it.

I agree that the use of 4oz of blue cheese makes it too strong. Used less and was good but will try another cheese next time. Also, watched it on TV...why can't the shows show how the recipe is TRULY prepared ( didn't mention baking the pears first, drizzled the honey over the crostada AFTER it was cooked..etc. If one watched only the show the recipe wouldn't work.

The receip would be wonderful if the blue cheese is omitted. My tase buds just don't accept the blue cheese in the crostata, even though I like blue cheese.

This is a recipe that allows for the use of other fruits such as apples, fresh peaches adjusting the type of cheese used for each fruit.

did not care for the blue cheese in this recipe. i think maybe a cheddar would be better.

I really love the crust recipe. I live at 7500' and had to add a lot more water, but otherwise i was very happy with the crust. He was right about adding the lemon zest to the crust it really helped the flavor. As for the pie filling, I wasn't really that happy with it. I love Pear, walnut and blue cheese salads and thought this would be fabulous, but it was just o.k. I am going to try it again but with different fillings. Also, I was a bit confused by the directions, they were different than what he did on the t.v. show.
