I used panko. Crispy and delicious. I seasoned the flour with dried thyme because I didn't have fresh.

Spatzele was a change for me. Tryed to remember how grandmother done it. Will thin it down or try to find seive that has larger holes. End worth it. Go Tyler.

I made the pork schnitzel and spaetzle and they were both incredible. It does take a little elbow work to make the spaetzle but was well worth it. I made 2 batches of the spaetzle and thinned out the second one slightly so it would go through the colander a little easier. I will definitely make this again. Thanks Tyler.

Just a little hint, when using pork, be sure to cut the edges so the cutlet will not curl.
In Austria, we use veal cutlets. You can also use turkey breasts.

Spaetzle, there is a spaetzle maker. It looks like a grader with a sliding box. All you have to do is place the grader on the pot, fill the box with the batter and slide back a forth. It's really easy and fun. We as kids used to help Mom with this part.

The whole meal is great. Thanks.

I used a tenderloin instead of a center cut and it just melts in your mouth. Used Progresso Italian bread crumbs, worked out great. Just loved the spatzel buy the book. It's a keeper!

I made the Schnitzel, the Spaetzle and the Apples. This meal was out of this world. The spaetzle was fabulous. At first I thought the different dishes might be time consuming but it was quite easy and didn't take long. Made the apples first, then the spaetzle which can sit in the pan covered whle you cook the chops. The fried sprigs of thyme really add a great flavor just keep in mind this is a winter stick to your ribs meal!
