Excellent recipe. Love it. Just like my grandmother from Spain used to make it - I added some cumin to make it a little more like my grandmother's recipe. I like it topped with heated pork n beans. My husband likes his pork and beans on the side.

I liked this recipe, however the baby greens mixture seemed a little out of place if you ask me. Would rather top it off with some salsa.

Had to add some additional spice, kind of blah without it.

This is a great recipe for a dinner party or cocktail party. It's really easy to make, not very messy, and everyone that has tried it LOVES it.

Some advice: If you don't have an ovenproof skillet (I don't, or a 12 inch one, so I used 2 smaller skillets to fry everything in and then transferred the mixture to a round glass Pyrex pie pan, then added the egg and baked. It fits perfectly into the pan and came out great.

If you want to sub Smart veggie chorizo-style sausages for real chorizo, it works really well. Just be careful not to burn the sausage when frying because it cooks faster than real chorizo. Half the people at the party couldn't tell it was vegetarian, and when they found out, they were raving about it.

If the store doesn't have chorizo links, you can use ground loose chorizo but I don't recommend it. I tried it once out of desperation and the tortilla was too greasy.

By far, this is one of my favorite things to make!

If your going to make this recipe do not add any salt!!! The chorizo/potatoe mixture was pretty good going in, but after adding the eggs (only a small pinch of salt added, abouy an 1/8 tsp and cooking in the oven it was too salty to eat...

I made this (minus the greens as an alternative to a sausage breafast strata I've been making for years. This was even better and my guests loved it. I sauted the potatoes, onion and sausage two days ahead of time, then reheated them in the pan before adding the egg mixture and baking. Easy and delicious.

I used smoked sausage and smoked bacon..cooked the meat first, then I cooked the potatoes/onions..added the meat back to reheat before adding the eggs..Also added some cheese to the egg mixture..really good and simple. Can really change it up to your liking..
