I thought it was ok, but not great. I think I must know why, lol. I saw the Disney movie Ratatouille and was expecting something a little "above and beyond" expectations. lol. It's certainly something to try and if you're a vegetarian it's perfect. It's a nice vegetable stew, which tasted more like a side dish to me then a main course. I wasn't too keen on the topping, but I'm not a big fan of feta cheese.

OMG! The vegetables were delish but the topping...well it is totally amazing! There's just my hubbie and I so i will cut the recipe in half next time. The leftover topping is good on steak, lamp, and pork. I used the topping on a grilled veggie platter for a party and I was the Queen of the party! Thank You Tyler!

It was amazing. My mother who was born in Nice, France used to make this dish. It taste just like it except the topping was Tyler's unique perfect touch that WOWed me.
Unbelievably delicious. I will make again and again.

I searched for 'french vegetarian' cuisine on this site and came across this recipe. Was skeptical because it sounded like a very simple dish and I didn't expect it to have a particularly interesting flavour. But I was wrong and we loved it - even my carnivorous husband who hadn't been at all enthusiastic about ratatouille said it was a great dish and we should bring it to parties. The topping is awesome, although there was far too much for the ratatouille, next time I'd make about half the quantity of topping. No loss though, I've been eating it with pita.

Pamela forgot to tell you that we also roast the eggplant, zucchini, tomatoes, and onions in a smoker. It adds a nice touch. We have also roasted them on the grill, which is also nice. This is one of our favorites, in addition to Tyler's chicken cacciatore.

I have made this sooo many times. The topping with the crunch of almonds and combination of olives and feta is an amazing touch. Have used that topping on other recipes

If you're going to make a ratatouille recipe, this is the one to choose! The un traditional addition of cheese, olives and nuts makes this a great choice to serve even to people who think they dont like ratatouille. Recommend using a top quality sheep's milk feta as it makes a big difference. Also, I substituted pine nuts for the almonds and it ws delicious.
