    The only part of this recipe that I made was the apples - as a side dish for brunch. I made them in a glass dish, and during the last 5 minutes I sprinkled 1-2 tablespoons of brown sugar onto the apples and stirred them well. YUMMMMMM!!

    Similar to the 'drunken apples' they serve at Famous Daves. They were a hit! Thanks, Tyler. I have NEVER been disappointed in any of your recipes!

    After watching the show, we thought we MUST try this...then after reading the comments, I was hesitant. But thankfully my son insisted, and he made them.
    BRAVO!
    I looked at the comments and weighed them carefully and decided the first one was on to something by cutting the ricotta down to 1 1/4. We did use buttermilk as well as everything else that the recipe called for.
    So delightful, and light!
    I love the tang of the lemon, with the ricotta. VERY good combo!
    The apples were delightful, but after not eating sweet anything for quite awhile,..towards the end it was getting kinda sweet!
    I'm thinking since we used a maple flavored bacon, and not the prosciutto, that saltiness maybe would of been a nice compliment.
    One of the other comments said that they were good enough to eat plain,..and we agree!
    The Peach Billini's were brilliant!

    These pancakes are awesome. I am not a huge fan of pancakes, as they are always hard and doughy, but these are fluffy and light and I can eat tons of them. I used 1 1/4 cups ricotta, and since I had no buttermilk, I used skim milk. That's the only things I changed, and it is perfect. I am completely surprised at the low ratings this recipe got, if you follow the recipe exactly, and just reduce the ricotta to 1.25 cups instead of 2, you will eat the most wonderful pancakes ever. I did not have apples, so I used bananas instead, and just cooked up regular bacon. The star is the pancakes, and they are good with just powdered sugar alone. Love this recipe, and my family did too. Will make it many more times. Thanks Tyler, you are awesome!!!

    When I saw this episode of the Ricotta Pancakes I was thinking to myself, so that's how to get the pancakes really fluffy! I was so wrong. I told my husband I was going to make him a very special breakfast this Sunday, and I got all the ingredients for this Ricotta Pancake mix recipe, and let me tell you, it was a total disaster. I mean I set my gas range stove level to a one, and I kid you not, after 20 min of trying to cook one pancake, the inside was goo mixed with bits of ricotta. The outside mind you was very light and very appeasing, but the pancakes were SO NOT GOOD!!! After this I was thinking well maybe it's the pan, so then i put some of the batter in my waffle iron! An even more big mistake because I had to clean out all the goo that had gotten stuck on the ridges of my waffle iron. Despite the fact that I used a non stick cooking spray, the pancakes/waffles, were not a success. I followed the recipe to a tee, and the pancakes/waffles were not done, sour and heavy. I'm sorry tyler, but scrap this one from your recipe book. I still think you are a great cook though:

    So these turned out great a few tips though for those making them. If you have it, use a griddle set at 325 degrees...cook them low and slow. The pancake themselves were great and we loved the cheese. Although when we roast the apples again we are going to add some cinnamon and brown sugar to give them more flavor and carmelization. We didn't have any problems with ours turning out soggy...it's all in the griddle. Overall we really loved this recipe, but next time we will tweak the apples.

    I was having all the same problems everone else was. Soggy, raw, basically horrible. I reviewed the recipe, saw that it called for baking powder not soda. All other pancake recipes use baking soda. Once I added the baking soda, they were fine. Unfortunately I had already wasted nearly all of the batter. Not sure I will try these again.

    I've been looking for a good pancake receipe and I have to say the flavor was delicious but I agree the pancakes are soggy. I couldn't tell if they were done or if I undercooked them but they were on the griddle for 10 minutes and still looked soggy. I think I'll try the receipe without the ricotta next time.

    This recipe was fantastic. I didn't have ricotta so i used cottage cheese, but blended it first to make it more smooth. The pancakes were perfectly moist with the cottage cheese, and the topping was delicious. I will definitely be making this during our next brunch!

    I didn't have a lemon on hand, so maybe that would've made all the difference in the world, but I did use an orange instead, but I still thought they were pretty bland, especially for all the work involved.
