    Very good flavor. Tastes very basic before the butter & cheese is added. After that I was pleasantly surprised. I used 6-7 cups broth and 1 & 1/2 cups of rice.My hubby thought it was a little tart but still good.

    This was a wonderful recipe. It is difficult to find scallops in our area, so I subbed Prawns instead. It turned out very well and my husband raved about the risotto. Thank you Tyler for another great recipe.

    This risotto was absolutely wonderful. Like other reviewers, I cooked the scallops near the end of the process -- I can't see cooking them first and then letting them dry out for 40 minutes. I also made my own chicken stock, and the results were superb. Thank you, Tyler.

    The risotto was good, but not fantastic. Granted, I used only white and crimini mushrooms, but the dish wasn't as flavorful as I would have liked. One tip: make sure the pan is VERY hot before you sear the scallops--otherwise you might overcook them waiting for a brown crust.

    Great final result, but takes A LOT longer than the 35 minutes it shows on the recipe. It's about 8-10 minutes between each cup of chicken stock. The entire process (including prep time was about 1-1/2 hours. Would definitely make again, but plan on longer preparation time.

    I used ground turkey instead of beef and it was actually good. I would add more garlic next time.

    I made this for my husband for Valentine's Day and he said it was like eating in a fine restaurant! It even reheated well the next day. It was a little time consuming in having to add the broth and stir and stir, but it was well worth it!

    I cut the recipe in half for two for our Valentine's dinner and did not use scallops as it was a side for some beef filets(I am always looking for something different than the expected potatoes. It was excellent, although I noticed it took more chicken stock than anticipated. Also, I think I will get unsalted broth next time as it ended up a little too salty for my taste. Even halving the recipe was more than enough for 2 people as a side dish - more likely enough for 4. Hubby evidently loved it; he couldn't wait to call his friends to brag on his Valentine dinner!

    This meal was delicious! I prepared it as a Valentine's Day dinner for two at home and my date was very impressed. I highly recommend it, however I agree with the other reviews that say it takes longer than listed to prepare - give yourself about an hour and a half to prepare the risotto.
