    I'm so glad that I cooked two chickens, so that I had leftovers! I couldn't get crimini mushrooms, so I bought portobellos and cut them up. This was amazing and even my 8 & 11 yr. olds LOVED the recipe!

    I have a question, I'm wondering if I should use a roasting pan or just a heavy bottomed bakling sheet, and if I use the roasting pan should I use a rack or just lay the chicken in without a rack (because with a rack how would I put the mushrooms around the chicken? Suggestions anyone?

    I made this for dinner last night. It was the perfect technique for cooking a whole chicken. I think it turned out better (as easier than when we roitissere (sp? a chicken. The stuffing didn't seem to perfume my bird as much as I hoped it would. I will definitely make this again. Next time I will add more seasoning to the bird before blanketing it with bacon. Maybe even inject some flavor into the flesh. Definitely a keeper recipe though!

    I made this for my husband for his birthday and he was licking the plate off at the end of it. We enjoyed this meal so much. The cremini mushrooms are to die for. I never had that kind of mushroom until now. The way it roasts in the juice of the chicken+bacon+stuffing mix is so memorable on your taste palate. This roast chicken is not as time consuming as others, but it does require TLC. I basted this every 20 minutes because I was afraid this would dry out. That paid off because the juices in the chicken was delectable. The juices mind you had all the savory flavor from all the stuffing mix. I got a 7lb roaster and doubled the amount of stuffing mix (1 full lemon, 1 full red onion, a whole head of garlic, and a bunch of thyme, etc. Also, 3lb of cremini mushrooms did sound like a lot, but I should have put the entire 3lb. Mushrooms shrink and by the way it tastes in this dish, you surely want leftovers of it! ENJOY!!!

    This is a great roast chicken recipe! But, 3 lbs of creminis? That sounds like an awful lot considering mushrooms are light as a feather, so I used 2 pkgs. A great Sunday roast chicken!!!

    I was pleasantly surprised to find that this recipe actually worked! I made the chicken and the potatoes and it was very good! The only issue was that I thought the chicken could have been a little more seasoned but aside from that it was great! My mother ate it the next day and said it tasted like something from a gourmet restaurant! Thanks Tyler!

    The only thing I didn't do was tie the chicken. The legs started to come apart from the chicken when it was done but it tasted awesome! This is the first chicken I've roasted with anything but butter, salt and pepper and it turned out beautifully. Herbs are my friend!
