Ingredients

  • 1/2 cup balsamic vinegar
  • 1/2 cup dry sherry
  • 2/3 cup olive oil
  • 2 tablespoons strong brewed coffee
  • 6 garlic cloves, roasted
  • 2 shallots, roasted
  • 2 sprigs fresh rosemary
  • 1 tablespoon fresh thyme
  • 2 bay leaves, crumbled
  • 1 tablespoon kosher salt
  • 1 tablespoon cracked black pepper
  • 3 New York strip steaks, 3/4 pound each

Directions

Combine all ingredients in a non-aluminum mixing bowl. Pour into a zip-lock bag. Add the steaks and marinate for 4 to 5 hours in the refrigerator.

    Tyler Florence is a very talented and innovative culinary artist and his simplistic approach is certainly realized in this incredibly tasty marinade. We used it for 2 very nice flank steaks-the flavor was enhanced immensely, the addition of 'roasted' garlic and shallots is genius. Next attempt will will on some rib-eyes. Nice job Tyler.
