    This recipe was GREAT! I took the advice of other reviewers and cut the salt in half. I also used whole pepper corns and crushed them in the mortar and pestle with the rub. Marinated it over night. I cooked our pork shoulder for about 2.5 hours and in the last 45 min's or so added sliced potatoes, onions and a splash of white wine to the roasting pan (so good, caught all of the yummy juices from the pork. The crust on the roast was so good. This recipe is a keeper. So easy and SO delicious!!!

    I love your recipes Tyler! My first try at Pernil and it was a hit! I could not mash the ingredients with the knife. I'm not that skilled. I put everything in a baggie and smashed with a hammer! The house smelled wonderful. My dogs were sniffing the air and could not stay out of the kitchen! I'll make this recipe again and again!!

    At last, I can finally make Pernil. Over the years I have had hits and misses with Pernil. Finally, it is a hit each time. I varied from the recipe in which I will seasoning the Pernil a day or 2 before baking. This has given the Pernil more delicious flavoring.

    This recipe was a huge hit! Everyone was calling the next day saying they were sorry they didn't take my offer to take some home. The marinade would be wonderful on prime rib also-can't wait to do that. I heartily endorse this recipe! Thanks Tyler.

    Finger licking good.
    Just adjust the salt to your families taste. Mine came out a little to salty and I'm from DR. Saying that the recipe calls for too much salt is not a negative comment. Some people like a lot of sodium and some people don't. Then there are some that should not consume too much sodium because of medical reasons.

    Absolutely delicious! Any leftovers next day can go in a cuban bread with the pork juices or mojo. This is a can't miss recipe.

    Fantastic! Easy to prepare. The family loved it! I only used half as much salt as the recipe called for though. You will certainly enjoy this dish!
