My husband and I love sweet potatoes, but we can't have the butter, brown sugar, and marshmellows because we are trying to cut down on the sugar/fat. The honey on the diced sweet potatoes was perrrrrfect! We have tried the recipe with and without the olive oil. We liked it just slightly better with the olive oil, but making it with honey only was very tastey and figure friendly as well.
This recipe is going into permanent rotation!

yummy. kids love this dish. would be nice to mix in other root vegetables and cut them in larger pieces. Yum.

This is a recipe that I will make often. I loved how the olive oil, honey, and cinnamon caramelized on top of the sweet potatoes.

Did I say YUM yet? This was so easy and very delicious. Line your pan with aluminum foil to make clean up easier.

This was just fantastic,the only thing I did different was add a dash of cayenne pepper along with the black pepper and it was perfect.

I had hoped that these would turn out much like oven fries do when you use a yukon gold or baking potato. They did not, but I was not disappointed. They didn't crisp up the same as a regular potato and had a somewhat soft texture when finished. The taste, however, was fantastic! They honey and cinnamon compliment the sweet potato very well. They were gobbled up.

These potatoes had a good flavor, and were easy to make. However, I had to cook them much longer to get the right texture. (Could be a variance in oven temperature, but check before you remove them. I added fresh rosemary, which was a wonderful complement to the honey.
