I made these potatoes for my book club and they were fantastic. So easy to make just drizzled the EVOO, honey and Cin on top and threw in the oven. It took about 40 minutes for them to cook but they were worth the wait!

I generally prefer sweet potato recipes without an added sweetener, as they already possess a lot of natural sugar. However, for those with pan problems - there is a solution. Use a rimmed sheet pan, and line it with foil. Spray the foil with nonstick oil spray. Also, watch the baking time, as these things will stick like glue if roasted too long!

This was a delicious recipe. I would make one recommendation, use a jelly roll pan! I used a cookie sheet, the honey and cinamon oozed over the side and onto the bottom of my oven. It was smokey, thank goodness for self cleaning ovens.

Wow, these are delicious and made for a very pretty presentation. The only problem with these are the way some stuck and the sauce caramelized to the pan. My guess is that I cooked them too long and that caused the caramelization. The pan will require some heavy duty work to get it back in cooking shape. Grand recipe however!
